The first Biodynamic, natural dessert wine produced in the UK. Following the tradition of a French ‘vin doux’ or a ‘mistelle’, our high-ripening Solaris grape juice has been semi-fermented, before the addition of our Eau de Vie de Vin. The alcohol overcomes the natural yeasts and halts fermentation without the additional of sulphites. This process retains a lovely balance of sweetness and acidity with flavours of apricot, orange peel and honey. A beautiful way to end a meal, either with a cheese course, or a buttery fruit tart.
