A clean and beautifully delicate Pet Nat (petillant naturel) with flavours of strawberry and citrus. The grapes are co-fermented on the skins before being pressed into stainless steel tanks. They are bottled with precision timing just before the end of the primary fermentation, using the ancestral method of making a sparkling wine. The wine is disgorged but unfiltered and unfined.
It is named Lammas after the Celtic agricultural festival celebrating the abundance of summer.
Grapes: Pinot Noir & Seyval Blanc
